Simple baked tots made from shredded zucchini.

- 2 medium zucchini, shredded and squeezed dry
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg, lightly beaten
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Cooking spray
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a baking sheet with cooking spray.
- In a medium bowl, combine the dried zucchini, breadcrumbs, Parmesan cheese, egg, salt, and pepper. Mix until just combined.
- Shape the mixture into small, cylindrical tot shapes, about 1.5 inches long.
- Place the tots on the prepared baking sheet.
- Lightly spray the tops of the tots with cooking spray.
- Bake for 18 to 20 minutes, flipping halfway through, until golden brown and firm.
Notes
- Squeeze as much liquid as possible from the shredded zucchini for crispier tots.
- Use panko breadcrumbs for extra crunch.
