A comforting and easy zucchini casserole baked with a savory stuffing mix.
Ingredients

- 2 lbs zucchini, sliced
- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup shredded cheddar cheese
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup milk
- 1 box (6 oz) seasoned stuffing mix
- 1/4 cup butter, melted
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine sliced zucchini, chopped onion, chopped celery, shredded cheddar cheese, condensed cream of mushroom soup, and milk.
- Mix well to combine all ingredients.
- Pour the zucchini mixture into a greased 9×13 inch baking dish.
- In a separate small bowl, combine the stuffing mix and melted butter.
- Sprinkle the buttered stuffing mix evenly over the zucchini mixture in the baking dish.
- Bake for 30-40 minutes, or until the topping is golden brown and the casserole is bubbly.
- Let stand for 5 minutes before serving.
Notes
- You can substitute cream of chicken soup for cream of mushroom soup.
- Add cooked chicken or ground beef for a heartier meal.
- Top with extra cheese before baking if desired.
