Ingredients

- 1 red onion, thinly sliced
- 1 cup shredded carrots
- 1/2 cup dried cranberries
- 1/2 cup chopped pecans
- 1/4 cup apple cider vinegar

- 2 tablespoons maple syrup
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine sliced cabbage, red onion, shredded carrots, dried cranberries, and chopped pecans.
- In a small bowl, whisk together apple cider vinegar, olive oil, maple syrup, and Dijon mustard.
- Season the dressing with salt and pepper.
- Pour the dressing over the cabbage mixture.
- Toss well to coat all ingredients.
- Chill for at least 30 minutes before serving to allow flavors to meld.

- For a sweeter salad, add more maple syrup.
