- 1 cup wild rice blend
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 cup dried cranberries
- 1/4 cup chopped pecans or walnuts (optional)
- Salt and black pepper to taste
Instructions
- Rinse the wild rice blend under cold water.
- In a medium saucepan, combine the rinsed wild rice and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 45-50 minutes, or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic to the skillet and cook for 1 minute more until fragrant.
- Once the rice is cooked, stir in the sautéed onion and garlic mixture, dried cranberries, and chopped nuts (if using).
- Season with salt and black pepper to your preference.
- Serve warm.
Notes
- For a richer flavor, you can use chicken broth instead of vegetable broth.
- Toasted nuts add an extra layer of flavor and crunch.
- This pilaf can be served as a side dish or a light main course.
