A satisfying and light soup recipe suitable for Weight Watchers.
Ingredients

- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 6 cups vegetable broth
- 1 (15 ounce) can diced tomatoes, un-drained
- 1 cup green beans, trimmed and cut
- 1 cup frozen peas
- 1 cup chopped zucchini
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Stir in garlic and cook for 1 minute more.
- Pour in vegetable broth and add diced tomatoes. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Add green beans, peas, and zucchini.
- Stir in basil and oregano.
- Simmer for another 10-15 minutes, or until vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot.
