Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 (15 ounce) can diced tomatoes, un-drained
  • 1 cup green beans, trimmed and cut
  • 1 cup frozen peas
  • 1 cup chopped zucchini
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Stir in garlic and cook for 1 minute more.
  4. Pour in vegetable broth and add diced tomatoes. Bring to a boil.
  5. Reduce heat, cover, and simmer for 15 minutes.
  6. Add green beans, peas, and zucchini.
  7. Stir in basil and oregano.
  8. Simmer for another 10-15 minutes, or until vegetables are tender.
  9. Season with salt and pepper to taste.
  10. Serve hot.
