Description
A quick recipe for Jamaican-style curry chicken served with soft gnocchi.

- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon Jamaican curry powder
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper (optional)
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 cup chicken broth
- 1/2 cup heavy cream or coconut milk
- 1 (16 ounce) package potato gnocchi
- Salt and black pepper to taste
- Fresh cilantro, chopped, for garnish
Instructions
- Season the chicken pieces with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
- Add the onion to the skillet and cook until softened, about 4 minutes. Add the garlic, curry powder, turmeric, cumin, and cayenne pepper (if using). Cook for 1 minute until fragrant.
- Stir in the diced tomatoes and chicken broth. Bring the mixture to a simmer.
- Return the chicken to the skillet. Reduce heat to medium-low, cover, and simmer for 10 minutes, or until the chicken is cooked through.
- Stir in the heavy cream or coconut milk.
- While the sauce simmers, cook the gnocchi according to package directions. Drain well.
- Add the cooked gnocchi to the curry sauce and stir gently to coat. Heat through for 2 minutes.
- Taste and adjust seasoning with salt and pepper. Garnish with fresh cilantro before serving.
Notes
- For a thicker sauce, simmer uncovered for a few extra minutes before adding the gnocchi.
- If you prefer a milder flavor, reduce or omit the cayenne pepper.
