- 4 cups cubed watermelon
- 2 cups cubed fresh pineapple
- 1/4 cup chopped fresh mint
- 1 tablespoon lime juice
- 1 teaspoon honey (optional)
Instructions
- Place the cubed watermelon and pineapple in a large bowl.
- In a small bowl, whisk together the lime juice and honey, if using.
- Pour the lime dressing over the fruit mixture.
- Gently toss the fruit to coat evenly.
- Stir in the chopped fresh mint.
- Chill for at least 15 minutes before serving.
Notes
- For a cooler salad, freeze the fruit for 30 minutes before mixing.
- You can substitute lemon juice for lime juice if preferred.
