Description
A simple recipe for pasta coated in a creamy sauce made from sweet potatoes.
Ingredients

- 1 pound pasta (any shape)
- 2 medium sweet potatoes, peeled and cubed
- 1/2 cup vegetable broth
- 1/4 cup nutritional yeast
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of nutmeg
Instructions
- Cook pasta according to package directions. Reserve about 1 cup of the pasta water before draining.
- While pasta cooks, steam or boil the sweet potato cubes until very tender, about 15 minutes.
- Drain the sweet potatoes and transfer them to a blender or food processor.
- Add vegetable broth, nutritional yeast, olive oil, minced garlic, salt, pepper, and nutmeg to the blender.
- Blend until the mixture is completely smooth and creamy. Add reserved pasta water, one tablespoon at a time, until the sauce reaches your desired consistency.
- Return the drained pasta to the pot. Pour the sweet potato sauce over the pasta.
- Toss gently to coat the pasta evenly. Heat briefly over low heat if necessary.
- Serve immediately.
Notes
- For a richer flavor, roast the sweet potatoes instead of boiling them.
- Add a squeeze of lemon juice to the sauce for brightness.
- Garnish with fresh parsley or toasted nuts.
