  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter
  • 1/2 cup maple syrup
  • 1/4 cup plant-based milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen strawberries, chopped

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, whisk together the rolled oats, flour, baking soda, and salt.
  3. In a separate large bowl, mix the peanut butter, maple syrup, plant-based milk, and vanilla extract until smooth.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Gently fold in the chopped strawberries.
  6. Press the mixture evenly into the prepared baking pan.
  7. Bake for 25 to 30 minutes, or until the edges are lightly golden.
