- 1 1/2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup creamy peanut butter
- 1/2 cup maple syrup
- 1/4 cup plant-based milk
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen strawberries, chopped
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, whisk together the rolled oats, flour, baking soda, and salt.
- In a separate large bowl, mix the peanut butter, maple syrup, plant-based milk, and vanilla extract until smooth.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Gently fold in the chopped strawberries.
- Press the mixture evenly into the prepared baking pan.
- Bake for 25 to 30 minutes, or until the edges are lightly golden.
- Let the bars cool completely in the pan before cutting into squares.
Notes
- If using frozen strawberries, do not thaw them before adding to the batter.
- For firmer bars, chill them in the refrigerator for at least one hour after cooling.
