Description
A simple recipe for a classic Southern peach cobbler made entirely without animal products, sweetened with maple syrup.

- 4 cups fresh or frozen peach slices
- 1/2 cup maple syrup
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar (for topping)
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 cup cold vegan butter, cut into small pieces
- 1/2 cup unsweetened plant milk (soy or almond)
Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Lightly grease an 8×8 inch baking dish.
- In a medium bowl, combine the peach slices, maple syrup, lemon juice, vanilla extract, and cinnamon. Pour this mixture into the prepared baking dish.
- In a separate bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- Cut in the cold vegan butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Stir in the plant milk until just combined; do not overmix the batter.
- Drop spoonfuls of the batter evenly over the peach mixture in the baking dish.
- Bake for 35 to 40 minutes, or until the topping is golden brown and the filling is bubbly.
- Let the cobbler cool for at least 15 minutes before serving.
Notes
- For a richer flavor, use fresh, ripe peaches.
- If using frozen peaches, do not thaw them before mixing with the syrup.
- Serve warm with a scoop of vegan vanilla ice cream.
