Description

A simple recipe for a classic Southern peach cobbler made entirely without animal products, sweetened with maple syrup.

  • 4 cups fresh or frozen peach slices
  • 1/2 cup maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar (for topping)
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold vegan butter, cut into small pieces
  • 1/2 cup unsweetened plant milk (soy or almond)

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease an 8×8 inch baking dish.
  2. In a medium bowl, combine the peach slices, maple syrup, lemon juice, vanilla extract, and cinnamon. Pour this mixture into the prepared baking dish.
  3. In a separate bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  4. Cut in the cold vegan butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  5. Stir in the plant milk until just combined; do not overmix the batter.
  6. Drop spoonfuls of the batter evenly over the peach mixture in the baking dish.
  7. Bake for 35 to 40 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let the cobbler cool for at least 15 minutes before serving.

Notes

  • For a richer flavor, use fresh, ripe peaches.
  • If using frozen peaches, do not thaw them before mixing with the syrup.
  • Serve warm with a scoop of vegan vanilla ice cream.
