Description

A simple recipe for moist vegan pumpkin bread topped with a sweet maple glaze.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup unsweetened plant milk
  • 1 teaspoon vanilla extract
  • For the Glaze: 1 cup powdered sugar
  • 2 tablespoons pure maple syrup
  • 1 tablespoon unsweetened plant milk

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
  3. In a separate medium bowl, mix the pumpkin puree, granulated sugar, brown sugar, vegetable oil, plant milk, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
  8. While the bread cools, prepare the glaze: Whisk together the powdered sugar, maple syrup, and plant milk until smooth.
  9. Once the bread is completely cool, drizzle the maple glaze over the top. Slice and serve.

Notes

  • For a richer flavor, use dark brown sugar instead of light brown sugar.
  • If you do not have all the spices, you can use 2 teaspoons of pumpkin pie spice blend instead.
  • Do not frost the bread until it is fully cooled, or the glaze will melt off.
