Description

A simple recipe for avocado toast topped with vegan pesto and a fried egg substitute.


Ingredients

  • 2 slices bread
  • 1 ripe avocado
  • 2 tablespoons vegan pesto
  • 1 vegan egg substitute patty (or tofu slice)
  • 1 teaspoon olive oil
  • Pinch of salt
  • Pinch of black pepper

Instructions

  1. Toast the bread slices to your preference.
  2. While the bread toasts, heat the olive oil in a small pan over medium heat.
  3. Cook the vegan egg substitute patty according to package directions, usually 2-3 minutes per side.
  4. Mash the avocado in a small bowl with a fork. Add salt and pepper to taste.
  5. Spread the mashed avocado evenly over the two toast slices.
  6. Top each slice with one tablespoon of vegan pesto.
  7. Place one cooked vegan egg substitute patty on top of the pesto layer on each toast.
  8. Serve immediately.

Notes

  • You can use store-bought or homemade vegan pesto.
  • If using tofu instead of a patty, press it well before frying.
  • For a different flavor, try adding red pepper flakes before serving.
