Description
A simple recipe for avocado toast topped with vegan pesto and a fried egg substitute.
Ingredients

- 2 slices bread
- 1 ripe avocado
- 2 tablespoons vegan pesto
- 1 vegan egg substitute patty (or tofu slice)
- 1 teaspoon olive oil
- Pinch of salt
- Pinch of black pepper
Instructions
- Toast the bread slices to your preference.
- While the bread toasts, heat the olive oil in a small pan over medium heat.
- Cook the vegan egg substitute patty according to package directions, usually 2-3 minutes per side.
- Mash the avocado in a small bowl with a fork. Add salt and pepper to taste.
- Spread the mashed avocado evenly over the two toast slices.
- Top each slice with one tablespoon of vegan pesto.
- Place one cooked vegan egg substitute patty on top of the pesto layer on each toast.
- Serve immediately.
Notes
- You can use store-bought or homemade vegan pesto.
- If using tofu instead of a patty, press it well before frying.
- For a different flavor, try adding red pepper flakes before serving.
