Description

A simple recipe for making soft, sweet vegan cinnamon raisin bread at home.


Ingredients

  • 1 cup warm plant milk (about 105-115F)
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1/4 cup melted vegan butter or oil
  • 1 teaspoon salt
  • 3 1/2 cups all-purpose flour
  • 1/2 cup raisins
  • 2 tablespoons ground cinnamon

Instructions

  1. Combine warm plant milk and yeast in a large bowl. Let stand for 5 minutes until foamy.
  2. Stir in sugar, melted vegan butter, and salt into the yeast mixture.
  3. Gradually add flour, mixing until a shaggy dough forms.
  4. Turn the dough out onto a lightly floured surface. Knead for 8-10 minutes until smooth and elastic.
  5. Flatten the dough into a rectangle. Sprinkle evenly with cinnamon. Scatter raisins over the cinnamon.
  6. Roll the dough tightly into a log. Place the log seam-side down in a greased 9×5 inch loaf pan.
  7. Cover the pan loosely and let the dough rise in a warm place for 1 to 1.5 hours, or until doubled in size.
  8. Preheat your oven to 375F (190C).
  9. Bake for 30-35 minutes, or until the top is golden brown and the internal temperature reaches 200F (93C).
  10. Remove the bread from the pan immediately after baking and cool completely on a wire rack before slicing.

Notes

  • For a richer flavor, use whole wheat flour for half of the all-purpose flour amount.
  • If your raisins are dry, soak them in warm water for 10 minutes before adding them to the dough.
  • You can brush the top of the loaf with a little extra melted vegan butter before baking for a softer crust.
