A simple recipe for rich, dairy-free chocolate pudding using avocado for creaminess.
Ingredients

- 2 ripe avocados
- 1/2 cup unsweetened cocoa powder
- 1/2 cup maple syrup
- 1/4 cup plant-based milk (almond or soy)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Cut the avocados in half, remove the pits, and scoop the flesh into a food processor or high-speed blender.
- Add the cocoa powder, maple syrup, plant-based milk, vanilla extract, and salt to the food processor.
- Process the ingredients until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed.
- Taste the pudding and add more sweetener or cocoa powder if desired.
- Divide the pudding into serving dishes.
- Chill in the refrigerator for at least 30 minutes before serving to allow it to firm up slightly.
Notes
- For a thicker pudding, reduce the amount of plant-based milk slightly.
- If you prefer a darker chocolate flavor, use dark cocoa powder.
- You can substitute agave nectar for maple syrup.
