  • 1/4 teaspoon vanilla extract (for cookie dough layer)
  • 1/4 cup vegan chocolate chips (for cookie dough layer)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease and line two 6-inch round cake pans.
  2. For the brownie layer: Whisk together flour, cocoa powder, baking soda, and salt in a bowl. In a separate bowl, cream together granulated sugar and 1/2 cup vegan butter. Mix in applesauce and 1 teaspoon vanilla extract. Gradually add dry ingredients alternately with 1/2 cup non-dairy milk, mixing until just combined. Fold in 1/2 cup chocolate chips. Divide batter evenly between the prepared pans.
  3. Bake the brownie layers for 18-20 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached. Let cool completely.
  4. For the cookie dough layer: Cream together brown sugar and 1/4 cup vegan butter. Mix in 1 tablespoon non-dairy milk and 1/4 teaspoon vanilla extract. Stir in 1/4 cup chocolate chips. This layer will be used as a frosting/filling, so no baking is required for this component.
  5. Once the brownie layers are cool, place one layer on a serving plate. Spread the cookie dough mixture evenly over the first layer. Top with the second brownie layer.
  6. Chill the cake for at least 30 minutes before slicing and serving.

Notes

  • You can use a store-bought vegan frosting between the layers if you prefer not to use the cookie dough mixture as filling.
