Description

A classic vanilla custard tart with a flaky pastry crust.


Ingredients

  • 1 pre-made pie crust
  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Press the pie crust into a tart pan. Prick the bottom with a fork.
  3. Bake the crust for 10-12 minutes until lightly golden. Remove from oven and let cool.
  4. In a saucepan, whisk together milk, sugar, and cornstarch until smooth.
  5. Cook over medium heat, stirring constantly, until the mixture thickens.
  6. In a separate bowl, whisk the egg yolks.
  7. Temper the egg yolks by slowly whisking in about half a cup of the hot milk mixture.
  8. Pour the tempered egg yolks back into the saucepan with the remaining milk mixture.
  9. Cook for another 2-3 minutes, stirring constantly, until thickened. Do not boil.
  10. Remove from heat and stir in butter and vanilla extract until smooth.
  11. Pour the custard into the cooled tart shell.
  12. Bake for 20-25 minutes, or until the custard is set.
  13. Let the tart cool completely before serving.
