Ingredients

- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cups buttermilk
- 1 egg
- 3 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
Instructions
- Combine flour, baking powder, salt, and sugar in a large bowl.
- Whisk buttermilk, egg, melted butter, and vanilla extract in a separate bowl.
- Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
- Stir in the ground cinnamon.
- Heat a lightly oiled griddle or frying pan over medium-high heat.
- Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
- Cook until bubbles appear on the surface and the edges look set, about 2-3 minutes.
- Flip and cook until the other side is golden brown, about 1-2 minutes more.
- Serve warm.
Notes
- For extra fluffiness, let the batter rest for 5 minutes before cooking.
- Use real maple syrup for serving.
