Description
A classic Italian dessert made with cream, sugar, and vanilla, set with gelatin.

- 2 cups heavy cream
- 1/2 cup granulated sugar
- 1 vanilla bean, split and scraped, or 1 teaspoon vanilla extract
- 1 packet (1/4 ounce) unflavored gelatin
- 1/4 cup cold water
- Fresh berries, for serving (optional)
Instructions
- In a medium saucepan, combine the heavy cream and sugar. If using a vanilla bean, add the scraped seeds and the pod to the cream mixture.
- Heat the cream mixture over medium heat, stirring occasionally, until the sugar dissolves and the cream is warm but not boiling. Remove from heat. If using a vanilla bean pod, remove it.
- In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes to bloom.
- Add the bloomed gelatin to the warm cream mixture and stir until completely dissolved. If using vanilla extract, stir it in now.
- Pour the mixture into individual ramekins or serving glasses.
- Chill in the refrigerator for at least 4 hours, or until set.
- Serve chilled, garnished with fresh berries if desired.
Notes
- For a smoother texture, you can strain the mixture before pouring it into ramekins.
- If you don’t have vanilla bean, pure vanilla extract is a good substitute.
