Vanilla Bean Panna Cotta

Description

A classic Italian dessert made with cream, sugar, and vanilla, set with gelatin.


Ingredients

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 vanilla bean, split and scraped, or 1 teaspoon vanilla extract
  • 1 packet (1/4 ounce) unflavored gelatin
  • 1/4 cup cold water
  • Fresh berries, for serving (optional)

Instructions

  1. In a medium saucepan, combine the heavy cream and sugar. If using a vanilla bean, add the scraped seeds and the pod to the cream mixture.
  2. Heat the cream mixture over medium heat, stirring occasionally, until the sugar dissolves and the cream is warm but not boiling. Remove from heat. If using a vanilla bean pod, remove it.
  3. In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes to bloom.
  4. Add the bloomed gelatin to the warm cream mixture and stir until completely dissolved. If using vanilla extract, stir it in now.
  5. Pour the mixture into individual ramekins or serving glasses.
  6. Chill in the refrigerator for at least 4 hours, or until set.
  7. Serve chilled, garnished with fresh berries if desired.

Notes

  • For a smoother texture, you can strain the mixture before pouring it into ramekins.
  • If you don’t have vanilla bean, pure vanilla extract is a good substitute.
