  • 1 cup cooked rice
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese (optional)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and bell peppers to the skillet. Cook until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the diced tomatoes, tomato sauce, cooked rice, and Italian seasoning. Stir to combine.
  5. Season with salt and pepper to taste.
  6. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes, allowing the flavors to meld.
  7. If using, sprinkle mozzarella cheese over the top during the last few minutes of cooking and cover until melted.
