- 1 lb boneless, skinless chicken thighs
- 1 cup buttermilk
- 2 tablespoons hot sauce
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder

- 1 cup all-purpose flour
- 1/2 cup cornstarch
- Vegetable oil for frying
- 4 brioche buns
- Spicy mayonnaise
- Pickle slices
Instructions
- In a bowl, combine buttermilk, hot sauce, salt, pepper, paprika, garlic powder, and onion powder. Add chicken thighs and marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
- In a shallow dish, whisk together flour and cornstarch.
- Remove chicken from marinade, letting excess drip off. Dredge chicken in the flour mixture, ensuring it is fully coated.
- Heat about 2 inches of vegetable oil in a heavy-bottomed skillet or Dutch oven to 350°F (175°C).
- Carefully place coated chicken thighs in the hot oil. Fry for 6-8 minutes per side, or until golden brown and cooked through. Drain on a wire rack.
- Toast the brioche buns.
- Spread spicy mayonnaise on the bottom bun. Place a fried chicken thigh on top. Add pickle slices. Top with the other half of the bun.
