Description

Ingredients

  • 34 pound beef chuck roast
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 2 tablespoons cornstarch (for thickening, optional)
  • 1/4 cup cold water (for thickening, optional)

Instructions

  1. Pat the beef roast dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned. Remove roast from skillet and place in your slow cooker.
  3. Add the chopped onion, carrots, and celery to the skillet. Cook for 5-7 minutes until softened. Add the minced garlic and cook for 1 minute more.
  4. Pour in the beef broth and red wine (if using), scraping up any browned bits from the bottom of the skillet. Stir in the Worcestershire sauce, thyme, and rosemary.
  5. Pour the liquid mixture over the roast in the slow cooker.
  6. Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the roast is tender.
  7. If you prefer a thicker gravy, remove the roast and vegetables from the slow cooker. In a small bowl, whisk together cornstarch and cold water. Stir this mixture into the liquid remaining in the slow cooker. Cook on high for 15-20 minutes, or until thickened.
  8. Shred or slice the pot roast and serve with the vegetables and gravy.

Notes

  • For extra flavor, you can add potatoes along with the carrots and celery during the last 2-3 hours of cooking.
