Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup butterscotch chips (optional)
  • For Butterscotch Glaze: 1/2 cup butter, 1 cup brown sugar, 1/4 cup milk, 1 teaspoon vanilla extract, 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Fold in the butterscotch chips, if using.
  7. Divide the batter evenly between the prepared pans.
  8. Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  10. Prepare the glaze: In a saucepan over medium heat, melt the 1/2 cup butter with the brown sugar. Stir until the sugar dissolves.
  11. Remove from heat and stir in the milk and vanilla extract. Let cool slightly.
  12. Gradually whisk in the powdered sugar until the glaze is smooth.
  13. Once the cakes are cool, spread the glaze over the top of one layer and place the second layer on top. Pour remaining glaze over the top layer.

Notes

  • For a deeper butterscotch flavor, use dark brown sugar in the cake batter.
  • You can substitute sour cream for buttermilk for a slightly tangier cake.
  • The glaze will set as it cools, so work quickly when applying it.
