Ingredients

- 1 pound cheese tortellini
- 1/2 cup sun-dried tomatoes
- 1/4 cup pitted Kalamata olives
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh basil
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions
- Cook tortellini according to package directions. Drain and rinse with cold water.
- In a large bowl, combine tortellini, sun-dried tomatoes, Kalamata olives, red onion, basil, and Parmesan cheese.
- In a small bowl, whisk together olive oil, red wine vinegar, and minced garlic.
- Pour dressing over pasta mixture and toss to coat.
- Season with salt and black pepper to taste.
- Chill for at least 30 minutes before serving.

- Add grilled chicken or shrimp for added protein.
- Substitute feta cheese for Parmesan cheese.
- Use different types of olives or roasted red peppers for variety.
