Ingredients

  • 1 pound cheese tortellini
  • 1/2 cup sun-dried tomatoes
  • 1/4 cup pitted Kalamata olives
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh basil
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

  1. Cook tortellini according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine tortellini, sun-dried tomatoes, Kalamata olives, red onion, basil, and Parmesan cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, and minced garlic.
