A simple and flavorful chicken dish with creamy sun-dried tomato sauce.
Ingredients

- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp butter
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, drained and chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Cut chicken breasts into bite-sized pieces. Season with salt and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add chicken and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in sun-dried tomatoes, heavy cream, chicken broth, Parmesan cheese, and basil.
- Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until sauce thickens.
- Return chicken to the skillet and stir to coat with sauce.
- Serve hot.
Notes
- Serve over pasta, rice, or with crusty bread.
- Garnish with fresh parsley if desired.
