Ingredients
Scale
- 2 chicken breasts, sliced into strips
- 2 cups penne pasta
- 1 ½ cups broccoli florets
- ½ cup sun-dried tomatoes, sliced
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 3 garlic cloves, minced
- 1 ½ cups heavy cream
- ¾ cup grated Parmesan cheese
- Salt and pepper, to taste
- 1 tsp Italian seasoning
- Optional: Fresh parsley, extra Parmesan for garnish
Instructions
- Bring a pot of salted water to a boil. Add penne pasta and cook until al dente according to package instructions. Reserve ½ cup pasta water, then drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season chicken strips with salt, pepper, and Italian seasoning. Sear the chicken for 3–4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- Steam broccoli florets until just tender, or blanch them by boiling for 2–3 minutes and shocking in ice water.
- In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
- Stir in heavy cream and bring to a gentle simmer. Gradually whisk in Parmesan cheese until the sauce thickens. Adjust seasoning with salt and pepper.
- Add cooked penne, steamed broccoli, and sun-dried tomatoes to the skillet. Toss until everything is coated in the sauce. Add a splash of reserved pasta water if needed to adjust the sauce consistency.
- Return the chicken strips to the skillet, nestling them into the pasta. Let everything heat through for 2–3 minutes.
- Serve immediately, garnished with fresh parsley and extra Parmesan, if desired.
Notes
- Use freshly grated Parmesan for a smooth and velvety Alfredo sauce.
- Reserve pasta water to adjust the sauce consistency if needed.
- Don’t overcook broccoli—keep it slightly crisp for better texture and color.
- You can swap penne for your favorite pasta or use gluten-free pasta for a gluten-free option.
