  • Salt and black pepper to taste
  • 1 tbsp olive oil (for sautéing)
  • 1 bay leaf (optional)
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 3–4 minutes until translucent.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Stir in ground turkey and cook for 6–7 minutes, breaking it apart until fully browned.
  4. (Optional) Stir in tomato paste and cook for 1 minute for extra richness.
  5. Add smoked paprika, cumin, thyme, salt, and pepper. Toast spices with the turkey mixture for 1 minute.
  6. Add diced sweet potatoes and pour in broth. Stir to combine.
  7. Bring to a boil, then reduce heat and simmer for 15–20 minutes until sweet potatoes are fork-tender.
  8. Stir in green peas and optional greens. Cook for another 5 minutes until heated through.
  9. Taste and adjust seasoning. Add a squeeze of lemon juice if desired.
  10. Serve hot, garnished with fresh parsley or cilantro.
