Turkey & Sweet Potato Stew is a cozy, nutrient-packed one-pot meal made with lean ground turkey, sweet potatoes, green peas, and warming spices. Perfect for meal prep or a healthy family dinner.

- 2 medium sweet potatoes, peeled and diced
- 1 cup green peas (fresh or frozen)
- 1 cup spinach or kale (optional)
- 1 small onion, finely chopped
- 2–3 garlic cloves, minced
- 4 cups low-sodium chicken broth or vegetable broth
- 1 tbsp tomato paste (optional)
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp dried thyme or Italian seasoning
- Salt and black pepper to taste
- 1 tbsp olive oil (for sautéing)
- 1 bay leaf (optional)
- Fresh parsley or cilantro, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 3–4 minutes until translucent.
- Add minced garlic and cook for 30 seconds until fragrant.
- Stir in ground turkey and cook for 6–7 minutes, breaking it apart until fully browned.
- (Optional) Stir in tomato paste and cook for 1 minute for extra richness.
- Add smoked paprika, cumin, thyme, salt, and pepper. Toast spices with the turkey mixture for 1 minute.
- Add diced sweet potatoes and pour in broth. Stir to combine.
- Bring to a boil, then reduce heat and simmer for 15–20 minutes until sweet potatoes are fork-tender.
- Stir in green peas and optional greens. Cook for another 5 minutes until heated through.
- Taste and adjust seasoning. Add a squeeze of lemon juice if desired.
- Serve hot, garnished with fresh parsley or cilantro.
Notes
- Use butternut squash or carrots instead of sweet potatoes if needed.
- Substitute ground turkey with lentils or chickpeas for a vegetarian version.
- Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
