Description
A festive triple-layer vanilla slice perfect for Christmas celebrations.

- 200g butter, softened
- 1 cup (200g) caster sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups (280g) all-purpose flour
- 1 teaspoon baking powder
- 1/4 cup (60ml) milk
- 150g white chocolate, melted
- Red and green food coloring (optional)
Instructions
- Preheat your oven to 180°C (350°F). Grease and flour a 20cm (8-inch) square baking tin.
- In a large bowl, cream together the butter and caster sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour and baking powder.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined.
- Divide the batter into three equal portions. Leave one portion plain, add a few drops of red food coloring to the second portion, and a few drops of green food coloring to the third portion. Mix each color well.
- Spoon the batters into the prepared tin, layering the colors for a marbled effect.
- Bake for 25-30 minutes, or until a skewer inserted into the center comes out clean.
- Let the slice cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
- Once cool, drizzle the melted white chocolate over the top. If desired, swirl in a little more red and green food coloring into the chocolate before drizzling.
- Cut into squares and serve.
Notes
- Ensure all ingredients are at room temperature for best results.
- Do not overmix the batter.
- Allow the slice to cool completely before cutting for clean slices.
