Description

A festive triple-layer vanilla slice perfect for Christmas celebrations.


Ingredients

  • 200g butter, softened
  • 1 cup (200g) caster sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups (280g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 cup (60ml) milk
  • 150g white chocolate, melted
  • Red and green food coloring (optional)

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and flour a 20cm (8-inch) square baking tin.
  2. In a large bowl, cream together the butter and caster sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined.
  6. Divide the batter into three equal portions. Leave one portion plain, add a few drops of red food coloring to the second portion, and a few drops of green food coloring to the third portion. Mix each color well.
  7. Spoon the batters into the prepared tin, layering the colors for a marbled effect.
  8. Bake for 25-30 minutes, or until a skewer inserted into the center comes out clean.
  9. Let the slice cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
  10. Once cool, drizzle the melted white chocolate over the top. If desired, swirl in a little more red and green food coloring into the chocolate before drizzling.
  11. Cut into squares and serve.
