  • ½ cup (120ml) heavy cream
  • 4oz (115g) white chocolate, melted
  • ½ cup (120ml) heavy cream (for ganache)
  • 4oz (115g) dark chocolate, finely chopped

Instructions

  1. Preheat oven to 325°F (163°C) and prepare a 9-inch springform pan.
  2. For the brownie crust, whisk together melted butter, sugar, and vanilla extract.
  3. Add eggs one at a time, then mix in cocoa powder, flour, salt, and baking powder.
  4. Spread batter in pan and bake for 15-18 minutes; let cool.
  5. Reduce oven to 300°F (150°C).
  6. For the cheesecake filling, beat cream cheese and sugar until smooth.
  7. Mix in vanilla and eggs one at a time.
  8. Add heavy cream and melted white chocolate, then pour over crust.
  9. Wrap pan in foil and place in a water bath.
  10. Bake for 50-60 minutes, then let cool in oven for 30 minutes.
  11. Refrigerate for at least 4 hours or overnight.
  12. For ganache, heat heavy cream and pour over chopped dark chocolate.
