Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup almonds, chopped
  • 1/2 cup cashews, chopped
  • 1/4 cup honey
  • 1/4 cup peanut butter
  • 1/4 cup dried cranberries
  • 1/4 cup raisins
  • 1/4 cup mini chocolate chips
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Spread oats and nuts on the baking sheet. Toast for 10 minutes, stirring halfway.
  3. In a saucepan, warm honey and peanut butter over low heat until smooth. Stir in vanilla and salt.
  4. Mix toasted oats, nuts, dried fruits, and chocolate chips in a bowl. Pour the honey mixture over and stir well.
  5. Press the mixture into a lined 8×8-inch pan. Refrigerate for 2 hours.
  6. Cut into bars and store in an airtight container.
