- 8 oz spaghetti
- 1 lb chicken breast, diced
- 2 cups fresh spinach
- 1 can (14 oz) diced tomatoes
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook spaghetti according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add diced chicken and cook until no longer pink.
- Add minced garlic and sauté for 1 minute.
- Stir in diced tomatoes and Italian seasoning. Simmer for 5 minutes.
- Add fresh spinach and cook until wilted.
- Toss the cooked spaghetti with the chicken and spinach mixture.
- Season with salt and pepper to taste. Serve hot.
Notes
- You can substitute chicken breast with chicken thighs for a richer flavor.
- Add grated Parmesan cheese on top before serving.
- For extra heat, sprinkle red pepper flakes.
