Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Wash, peel, and trim the carrots. If they’re large, cut them into uniform sticks or slices for even cooking.
- In a mixing bowl, whisk together the honey, olive oil, garlic powder, thyme, salt, and pepper until well combined.

- Roast for 20-25 minutes, flipping them halfway through to ensure even caramelization.
- Once roasted, transfer the carrots to a serving dish. Sprinkle with chopped parsley and serve warm.
