Ingredients

  • 1 cup buttermilk

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup boiling water
  • For the Frosting:
  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup unsweetened cocoa powder
  • 4 cups powdered sugar
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add the buttermilk, oil, eggs, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
  4. Carefully stir in the boiling water. The batter will be thin.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  8. While the cakes cool, prepare the frosting. In a large bowl, cream together the softened butter and cocoa powder until well combined.
  9. Gradually add the powdered sugar alternately with the milk, beating well after each addition. Stir in the vanilla extract.
  10. Once the cakes are completely cool, frost the top of one layer, place the second layer on top, and frost the top and sides of the entire cake.
