- 1 pound boneless, skinless chicken breasts
- 1 tablespoon vegetable oil
- 4 cups mixed greens
- 1 large carrot, shredded
- 1 red bell pepper, thinly sliced
- 1/2 cup chopped cilantro
- 1/4 cup chopped peanuts for garnish
- For the Dressing:
- 1/2 cup creamy peanut butter
- 1/4 cup warm water
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
Instructions
- Cook the chicken breasts in vegetable oil over medium heat until fully cooked. Let cool slightly, then shred or dice the chicken.
- Prepare the dressing: Whisk together peanut butter, warm water, soy sauce, rice vinegar, honey, ginger, and garlic in a small bowl until smooth. Add more water if needed to reach desired consistency.
- In a large bowl, combine the mixed greens, shredded carrot, sliced red bell pepper, cilantro, and cooked chicken.
- Pour the peanut dressing over the salad ingredients. Toss gently to coat everything evenly.
- Divide the salad among serving plates. Sprinkle with chopped peanuts before serving.
Notes
- You can grill or bake the chicken instead of pan-frying.
- For extra flavor, add a teaspoon of sriracha to the dressing for heat.
