Description

Quick and easy Thai chicken meatballs ready in under an hour, perfect for a weeknight meal.


Ingredients

  • 1 lb ground chicken
  • 1/4 cup panko breadcrumbs
  • 1 egg
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp sesame oil
  • 1 tsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 2 tbsp vegetable oil
  • For the sauce:
  • 1/4 cup peanut butter
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 1 tbsp sriracha
  • 2 tbsp water

Instructions

  1. In a large bowl, combine ground chicken, panko, egg, soy sauce, fish sauce, sesame oil, ginger, garlic, cilantro, and green onions. Mix well.
  2. Form the mixture into 1-inch meatballs.
  3. Heat vegetable oil in a large skillet over medium-high heat.
  4. Add meatballs to the skillet and cook, turning occasionally, until browned on all sides and cooked through, about 8-10 minutes.
  5. While meatballs are cooking, whisk together peanut butter, lime juice, honey, sriracha, and water in a small bowl to make the sauce.
  6. Once meatballs are cooked, pour the sauce over them in the skillet. Stir to coat.
  7. Cook for another 1-2 minutes until the sauce is heated through.

Notes

  • Garnish with extra cilantro and green onions if desired.
