Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 cups cooked white rice
  • 1 cup broccoli florets, blanched
  • 1/2 cup chopped red bell pepper
  • 1/4 cup soy sauce
  • 1/4 cup mirin (sweet Japanese rice wine)
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Sesame seeds for garnish
  • Green onions, sliced, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together soy sauce, mirin, brown sugar, sesame oil, grated ginger, garlic powder, and black pepper to make the teriyaki sauce.
  3. Add the chicken pieces to the teriyaki sauce and toss to coat. Let it marinate for at least 15 minutes.
  4. In a large casserole dish, combine the cooked rice, blanched broccoli florets, and chopped red bell pepper.
  5. Pour the marinated chicken and sauce over the rice and vegetable mixture. Stir gently to combine.
  6. Cover the casserole dish with foil.
  7. Bake for 25-30 minutes, or until the chicken is cooked through and the casserole is heated.
  8. Remove the foil and bake for an additional 5-10 minutes, or until the top is lightly browned.
  9. Garnish with sesame seeds and sliced green onions before serving.

Notes

  • You can use chicken breast instead of thighs if preferred.
  • Adjust the sweetness by adding more or less brown sugar to the sauce.
  • For a creamier casserole, you can add a 1/4 cup of mayonnaise or cream cheese to the mixture before baking.
