Description
A hearty and flavorful taco soup made easily in a slow cooker.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (15 ounce) can pinto beans, drained and rinsed
- 1 (15 ounce) can corn, drained
- 1 (10 ounce) can diced tomatoes with green chilies, undrained
- 1 (1 ounce) packet taco seasoning
- 1 (1 ounce) packet ranch dressing mix
- 4 cups beef broth
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess grease.
- Transfer the ground beef to a slow cooker. Add the chopped onion, kidney beans, pinto beans, corn, diced tomatoes with green chilies, taco seasoning, ranch dressing mix, and beef broth.
- Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Serve hot with your favorite toppings like shredded cheese, sour cream, and crushed tortilla chips.
Notes
- Adjust the spice level by using mild or hot diced tomatoes with green chilies.
- You can substitute ground turkey or chicken for the ground beef.
- Add other vegetables like bell peppers or zucchini if desired.
