Description

A festive and fun Taco Lasagna perfect for Halloween or Thanksgiving gatherings. This layered dish combines classic taco flavors with the comforting structure of lasagna.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 (15 ounce) can diced tomatoes and green chilies, undrained
  • 1 (15 ounce) can refried beans
  • 1 (10 ounce) can enchilada sauce
  • 8 ounces sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 corn tortillas
  • Optional toppings: shredded lettuce, diced tomatoes, black olives, jalapeños

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef in a skillet over medium heat. Drain off any excess fat.
  3. Stir in taco seasoning and diced tomatoes with green chilies. Simmer for 5 minutes.
  4. Spread a thin layer of refried beans on the bottom of a 9×13 inch baking dish.
  5. Layer 4 tortillas over the beans, overlapping slightly.
  6. Spread half of the meat mixture over the tortillas.
  7. Spoon half of the sour cream over the meat mixture.
  8. Sprinkle with half of the cheddar and Monterey Jack cheese.
  9. Repeat layers with remaining tortillas, meat mixture, sour cream, and cheese.
  10. Pour enchilada sauce evenly over the top.
  11. Cover with foil and bake for 20 minutes.
  12. Remove foil and bake for another 10-15 minutes, or until cheese is melted and bubbly.
  13. Let stand for 5-10 minutes before serving.
  14. Serve with your favorite toppings.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the meat mixture.
  • You can substitute ground turkey or chicken for ground beef.
  • If you don’t have enchilada sauce, you can use a can of mild taco sauce.
  • Make ahead: Assemble the lasagna, cover, and refrigerate for up to 24 hours before baking. You may need to add a few extra minutes to the baking time.
