Description
A festive and fun Taco Lasagna perfect for Halloween or Thanksgiving gatherings. This layered dish combines classic taco flavors with the comforting structure of lasagna.

- 1 pound ground beef
- 1 packet taco seasoning
- 1 (15 ounce) can diced tomatoes and green chilies, undrained
- 1 (15 ounce) can refried beans
- 1 (10 ounce) can enchilada sauce
- 8 ounces sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 12 corn tortillas
- Optional toppings: shredded lettuce, diced tomatoes, black olives, jalapeños
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef in a skillet over medium heat. Drain off any excess fat.
- Stir in taco seasoning and diced tomatoes with green chilies. Simmer for 5 minutes.
- Spread a thin layer of refried beans on the bottom of a 9×13 inch baking dish.
- Layer 4 tortillas over the beans, overlapping slightly.
- Spread half of the meat mixture over the tortillas.
- Spoon half of the sour cream over the meat mixture.
- Sprinkle with half of the cheddar and Monterey Jack cheese.
- Repeat layers with remaining tortillas, meat mixture, sour cream, and cheese.
- Pour enchilada sauce evenly over the top.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for another 10-15 minutes, or until cheese is melted and bubbly.
- Let stand for 5-10 minutes before serving.
- Serve with your favorite toppings.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the meat mixture.
- You can substitute ground turkey or chicken for ground beef.
- If you don’t have enchilada sauce, you can use a can of mild taco sauce.
- Make ahead: Assemble the lasagna, cover, and refrigerate for up to 24 hours before baking. You may need to add a few extra minutes to the baking time.
