A simple and delicious sweet tart dough recipe perfect for fruit tarts and other desserts.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 cup (2 sticks) cold unsalted butter, cut into cubes
- 1 large egg
- 1–2 tablespoons ice water
Instructions
- In a large bowl, whisk together flour, sugar, and salt.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- In a small bowl, whisk the egg with 1 tablespoon of ice water.
- Add the egg mixture to the flour mixture. Mix until just combined, adding more ice water a tablespoon at a time if needed to form a cohesive dough.
- Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- On a lightly floured surface, roll out the dough to about 1/8-inch thickness.
- Carefully transfer the dough to a tart pan, pressing it into the bottom and up the sides. Trim any excess dough.
- Prick the bottom of the tart shell with a fork.
- Chill the tart shell for another 15 minutes before baking.
- Bake according to your tart recipe’s instructions.
Notes
- Ensure butter and water are very cold for a flaky crust.
- Do not overwork the dough.
- Blind baking may be required depending on your tart filling.
