  • 1 cup (2 sticks) cold unsalted butter, cut into cubes
  • 1 large egg
  • 12 tablespoons ice water

Instructions

  1. In a large bowl, whisk together flour, sugar, and salt.
  2. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  3. In a small bowl, whisk the egg with 1 tablespoon of ice water.
  4. Add the egg mixture to the flour mixture. Mix until just combined, adding more ice water a tablespoon at a time if needed to form a cohesive dough.
  5. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  6. On a lightly floured surface, roll out the dough to about 1/8-inch thickness.
  7. Carefully transfer the dough to a tart pan, pressing it into the bottom and up the sides. Trim any excess dough.
  8. Prick the bottom of the tart shell with a fork.
  9. Chill the tart shell for another 15 minutes before baking.
  10. Bake according to your tart recipe’s instructions.
