Ingredients

- 1.5 lbs boneless, skinless chicken thighs
- 1 tbsp olive oil
- 1 cup sliced fresh peaches
- 1/4 cup chopped red onion
- 2 cloves garlic, minced
- 1/4 cup chicken broth
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp cornstarch
- Salt and pepper to taste
Instructions
- Season chicken thighs with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear chicken until browned on both sides. Remove chicken from skillet and set aside.
- Add sliced peaches and chopped red onion to the skillet. Cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- In a small bowl, whisk together chicken broth, soy sauce, honey, and cornstarch.
- Pour the sauce mixture into the skillet. Bring to a simmer, stirring until thickened.
- Return the chicken to the skillet. Simmer for 5-7 minutes, or until chicken is cooked through and coated in the sauce.
- Serve hot.
Notes
- Garnish with fresh basil or parsley if desired.
- Serve with rice or quinoa for a complete meal.
