A quick and flavorful stir fry featuring shrimp coated in a sweet and spicy chili sauce.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1/4 cup sweet chili sauce
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 1 tbsp water
  • Cooked rice, for serving

Instructions

  1. Mix the sweet chili sauce, soy sauce, cornstarch, and water in a small bowl to create the sauce. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the minced garlic and grated ginger. Cook for 30 seconds until fragrant.
  4. Add the sliced red bell pepper and broccoli florets. Stir fry for 3-4 minutes until vegetables are crisp-tender.
  5. Add the shrimp to the skillet. Cook for 2-3 minutes per side until pink and cooked through.
  6. Pour the prepared sauce over the shrimp and vegetables. Stir constantly until the sauce thickens, about 1 minute.
  7. Serve immediately over cooked rice.

Notes

  • For extra heat, add a pinch of red pepper flakes with the garlic and ginger.
  • You can substitute other quick-cooking vegetables like snow peas or sliced carrots.
