- 2 large zucchinis
- 1 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup pepperoni, chopped
- 1/4 cup chopped bell peppers
- 1/4 cup chopped onion
- 1 teaspoon dried oregano
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise.
- Scoop out the seeds and some of the flesh to create a boat shape.
- Arrange the zucchini boats on a baking sheet.
- In a small bowl, mix the pizza sauce, pepperoni, bell peppers, onion, oregano, salt, and pepper.
- Spoon the pizza mixture into the zucchini boats.
- Top with shredded mozzarella cheese.
- Bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
- Serve hot.

- You can add other pizza toppings like mushrooms or olives.
- For a vegetarian option, omit the pepperoni and add more vegetables.
