Tomatoes stuffed with a creamy tuna mousse, perfect for holiday gatherings like Easter and Christmas.

- 6 medium ripe tomatoes
- 1 can (5 oz) tuna in water, drained
- 4 oz cream cheese, softened
- 2 tablespoons mayonnaise
- 1 tablespoon finely chopped red onion
- 1 tablespoon finely chopped fresh parsley
- 1 teaspoon lemon juice
- Salt and black pepper to taste
- Paprika for garnish
Instructions
- Cut off the tops of the tomatoes and scoop out the seeds and pulp. Invert onto paper towels to drain.
- In a bowl, flake the drained tuna.
- Add the softened cream cheese, mayonnaise, chopped red onion, chopped parsley, and lemon juice to the tuna.
- Mix until well combined and creamy.
- Season with salt and black pepper.
- Carefully spoon the tuna mousse into the hollowed-out tomatoes.
- Garnish with a sprinkle of paprika.
- Chill for at least 30 minutes before serving.
Notes
- You can use tuna packed in oil if you prefer a richer flavor.
- For a lighter version, use light cream cheese and reduced-fat mayonnaise.
- Other herbs like dill or chives can be used instead of parsley.
- Add a pinch of cayenne pepper for a little heat.
