Ingredients

  • 6 medium ripe tomatoes
  • 1 can (5 oz) tuna in water, drained
  • 4 oz cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 tablespoon finely chopped red onion
  • 1 tablespoon finely chopped fresh parsley
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste
  • Paprika for garnish

Instructions

  1. Cut off the tops of the tomatoes and scoop out the seeds and pulp. Invert onto paper towels to drain.
  2. In a bowl, flake the drained tuna.
  3. Add the softened cream cheese, mayonnaise, chopped red onion, chopped parsley, and lemon juice to the tuna.
  4. Mix until well combined and creamy.
  5. Season with salt and black pepper.
  6. Carefully spoon the tuna mousse into the hollowed-out tomatoes.
  7. Garnish with a sprinkle of paprika.
  8. Chill for at least 30 minutes before serving.
