Description
Easy, fresh cucumber bites filled with a creamy, savory mixture.
Ingredients
Scale
- 2 large cucumbers
- 4 ounces cream cheese, softened
- 2 tablespoons plain Greek yogurt
- 1/4 cup finely chopped fresh dill
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons finely chopped red onion
Instructions
- Wash the cucumbers and trim off the ends. Cut each cucumber into 1-inch thick rounds.
- Use a small spoon or melon baller to carefully scoop out a small amount of the center from each cucumber round, creating a small well.
- In a small bowl, combine the softened cream cheese, Greek yogurt, dill, minced garlic, salt, and pepper. Mix until smooth.
- Stir in the chopped red onion.
- Spoon or pipe the cream cheese mixture into the wells of the cucumber rounds.
- Chill for at least 15 minutes before serving.
Notes
- For a firmer filling, use full-fat cream cheese.
- You can substitute chives for dill if preferred.
- If you do not have a piping bag, use two small spoons to fill the cucumber wells.
