Ingredients

  • 2 large cucumbers
  • 4 ounces cream cheese, softened
  • 2 tablespoons plain Greek yogurt
  • 1/4 cup finely chopped fresh dill
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons finely chopped red onion

Instructions

  1. Wash the cucumbers and trim off the ends. Cut each cucumber into 1-inch thick rounds.
  2. Use a small spoon or melon baller to carefully scoop out a small amount of the center from each cucumber round, creating a small well.
  3. In a small bowl, combine the softened cream cheese, Greek yogurt, dill, minced garlic, salt, and pepper. Mix until smooth.
  4. Stir in the chopped red onion.
  5. Spoon or pipe the cream cheese mixture into the wells of the cucumber rounds.
  6. Chill for at least 15 minutes before serving.

Notes

  • For a firmer filling, use full-fat cream cheese.
  • You can substitute chives for dill if preferred.
  • If you do not have a piping bag, use two small spoons to fill the cucumber wells.
