Instructions

  1. In a medium bowl, combine sliced strawberries, 1/4 cup granulated sugar, and water. Let stand for 15 minutes, stirring occasionally, until strawberries release their juices.
  2. In a large bowl, beat softened cream cheese, powdered sugar, and 1 teaspoon vanilla extract until smooth.
  3. In a separate bowl, whip heavy cream with 2 tablespoons granulated sugar and 1 teaspoon vanilla extract until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until just combined.
  5. In a trifle bowl or individual serving glasses, layer the ingredients: start with a layer of pound cake cubes, followed by a layer of the strawberry mixture (including juice), and then a layer of the cream cheese mixture.
  6. Repeat the layers until all ingredients are used, ending with a layer of the cream cheese mixture.
  7. Chill for at least 1 hour before serving. Garnish with fresh mint sprigs if desired.
