Description
Strawberry Cookies with Cream Cheese Frosting are soft, buttery sugar cookies topped with creamy strawberry frosting and fresh berries.

 - 2 ½ cups powdered sugar, sifted
 - 2–3 tbsp strawberry jam (seedless)
 - 1 tsp vanilla extract
 - Pinch of salt
 - 1–2 drops pink food coloring (optional)
 - Fresh strawberries (for topping)
 - Sprinkles (optional)
 
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
 - Cream softened butter and sugar together until light and fluffy (2–3 minutes).
 - Add egg and vanilla extract; mix until smooth and fully combined.
 - In a separate bowl, whisk together flour, baking soda, salt, and cornstarch. Gradually add to the wet mixture.
 - Scoop dough into 1.5-inch balls and place on baking sheet. Gently flatten each ball slightly.
 - Bake for 9–11 minutes, until edges are lightly golden. Let cookies cool completely on a wire rack.
 - To make frosting, beat cream cheese and butter until smooth. Add powdered sugar, strawberry jam, vanilla, salt, and food coloring. Mix until creamy.
 - Frost each cooled cookie with the strawberry cream cheese frosting.
 - Top with fresh strawberries and optional sprinkles. Serve or refrigerate until ready to enjoy.
 
Notes
- For stronger berry flavor, add 1–2 tbsp freeze-dried strawberry powder to frosting.
 - Cookies can be stored frosted in the fridge for 3–4 days.
 - Unfrosted cookies freeze well for up to 2 months.
 - Substitute gluten-free flour blend for a gluten-free version.
