  • Fresh strawberries (for topping)
  • Sprinkles (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream softened butter and sugar together until light and fluffy (2–3 minutes).
  3. Add egg and vanilla extract; mix until smooth and fully combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cornstarch. Gradually add to the wet mixture.
  5. Scoop dough into 1.5-inch balls and place on baking sheet. Gently flatten each ball slightly.
  6. Bake for 9–11 minutes, until edges are lightly golden. Let cookies cool completely on a wire rack.
  7. To make frosting, beat cream cheese and butter until smooth. Add powdered sugar, strawberry jam, vanilla, salt, and food coloring. Mix until creamy.
  8. Frost each cooled cookie with the strawberry cream cheese frosting.
  9. Top with fresh strawberries and optional sprinkles. Serve or refrigerate until ready to enjoy.
