Crispy eggrolls filled with a sweet and creamy strawberry cheesecake mixture, air-fried to golden perfection.

- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup diced fresh strawberries
- 8 eggroll wrappers
- Cooking spray
Instructions
- In a medium bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
- Gently fold in the diced strawberries.
- Lay an eggroll wrapper on a clean surface with a corner pointing towards you.
- Place about 2 tablespoons of the cheesecake filling in the center of the wrapper.
- Fold the bottom corner up over the filling.
- Fold in the left and right corners.
- Roll the eggroll tightly from the bottom up.
- Wet the top corner with a little water and press to seal.
- Repeat with the remaining wrappers and filling.
- Preheat your air fryer to 350°F (175°C).
- Lightly spray the eggrolls with cooking spray.
- Place the eggrolls in the air fryer basket in a single layer, making sure not to overcrowd.
- Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Serve warm, optionally with a dusting of powdered sugar or a side of strawberry sauce.
Notes
- Make sure the cream cheese is fully softened for a smooth filling.
- Don’t overfill the wrappers, or they may burst during cooking.
- Air frying time may vary depending on your air fryer model. Keep an eye on them to prevent burning.
