Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 pound asparagus, trimmed and cut into 1-inch pieces
  • 8 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • Cooked rice, for serving

Instructions

  1. In a small bowl, whisk together soy sauce, oyster sauce, and sesame oil.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add shrimp and stir-fry until pink and cooked through, about 2-3 minutes. Remove shrimp from skillet.
  4. Add asparagus and mushrooms to the skillet. Stir-fry until tender-crisp, about 5-7 minutes.
  5. Add garlic and ginger to the skillet and cook for 1 minute until fragrant.
  6. Return shrimp to the skillet. Pour the sauce over the shrimp and vegetables.
  7. Toss to coat everything evenly and heat through.
  8. Serve immediately over cooked rice.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the sauce.
  • You can substitute broccoli or snap peas for asparagus.
