  • 1 tsp vanilla extract

  • For the toffee sauce:
  • 1/2 cup unsalted butter
  • 1 cup dark brown sugar
  • 1 cup heavy cream
  • 1/2 tsp vanilla extract
  • Optional: pinch of sea salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease 6–8 ramekins or an 8×8-inch baking dish.
  2. Place chopped figs in a bowl. Sprinkle with baking soda and pour over boiling water. Let sit for 10–15 minutes.
  3. In a mixing bowl, cream butter and dark brown sugar until fluffy.
  4. Add eggs one at a time, then stir in vanilla extract.
  5. In a separate bowl, whisk together flour, baking powder, salt, and optional spices.
  6. Gradually fold dry ingredients into wet mixture until just combined.
  7. Stir in fig mixture, including soaking liquid, until evenly combined.
  8. Fill prepared ramekins 3/4 full and bake for 25–30 minutes, or 35–40 minutes for an 8×8 pan.
  9. To make the sauce, melt butter and brown sugar in a saucepan over medium heat.
  10. Add heavy cream slowly, stir constantly, and simmer for 4–5 minutes until glossy.
  11. Remove from heat and stir in vanilla and optional sea salt.
  12. Serve puddings warm with sauce poured over the top.
