Spooky and savory steak and cheese quesadillas perfect for a Halloween party or a fun weeknight meal.
Ingredients

- 1 pound flank steak, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 8 large flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup chopped red onion
- 1/4 cup chopped bell pepper (any color)
- Optional toppings: sour cream, salsa, guacamole, sliced jalapenos
Instructions
- In a bowl, toss the steak with olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Heat a large skillet over medium-high heat. Add the seasoned steak and cook until browned and cooked through, about 5-7 minutes. Remove steak from skillet and set aside.
- Wipe out the skillet if necessary. Place one tortilla in the skillet.
- Sprinkle half of the tortilla with cheddar cheese, Monterey Jack cheese, cooked steak, red onion, and bell pepper.
- Fold the other half of the tortilla over the filling to create a half-moon shape.
- Cook for 2-3 minutes per side, until golden brown and the cheese is melted.
- Repeat with the remaining tortillas and filling.
- Cut quesadillas into wedges and serve with optional toppings.
Notes
- For extra spooky quesadillas, use cookie cutters to create Halloween shapes from tortillas before filling and folding.
- Adjust spice levels to your preference.
- Make sure steak is thinly sliced for even cooking.
