Spooky and savory steak and cheese quesadillas perfect for a Halloween party or a fun weeknight meal.


Ingredients

  • 1 pound flank steak, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 8 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped red onion
  • 1/4 cup chopped bell pepper (any color)
  • Optional toppings: sour cream, salsa, guacamole, sliced jalapenos

Instructions

  1. In a bowl, toss the steak with olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  2. Heat a large skillet over medium-high heat. Add the seasoned steak and cook until browned and cooked through, about 5-7 minutes. Remove steak from skillet and set aside.
  3. Wipe out the skillet if necessary. Place one tortilla in the skillet.
  4. Sprinkle half of the tortilla with cheddar cheese, Monterey Jack cheese, cooked steak, red onion, and bell pepper.
  5. Fold the other half of the tortilla over the filling to create a half-moon shape.
  6. Cook for 2-3 minutes per side, until golden brown and the cheese is melted.
  7. Repeat with the remaining tortillas and filling.
  8. Cut quesadillas into wedges and serve with optional toppings.

Notes

  • For extra spooky quesadillas, use cookie cutters to create Halloween shapes from tortillas before filling and folding.
  • Adjust spice levels to your preference.
