- 1 pound chicken breast, cut into 1-inch cubes
- 1 cup cherry tomatoes
- 1 cup small mozzarella balls (bocconcini)
- 1 cup blueberries
- 1/4 cup olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden or metal skewers
Instructions
- Soak wooden skewers in water for 30 minutes if using.
- In a bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Add chicken cubes to the marinade and toss to coat. Let marinate for at least 15 minutes.
- Preheat your grill to medium heat.
- Thread the ingredients onto the skewers, alternating chicken, tomato, mozzarella, and blueberry. Aim for a pattern that resembles the colors of the flag (red, white, blue).
- Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temperature of 165°F or 74°C).
- Remove from grill and serve immediately.
Notes
- You can substitute chicken with firm tofu for a vegetarian option.
- For extra flavor, brush the skewers with a light balsamic glaze during the last few minutes of cooking.
